Baron has extremely high weapon scaling. Three Sorrowblades may seem crazy but remember that his basic attack scales at %130 Weapon Power. Breaking Point is for you A and C abilities primarily and because Baron is not great with a Bonesaw (do take bonesaw against a real Tanky team though).
Lifesteal Baron is easily countered by Shiv on account of the burst healing. Don't get poisoned Shiv on Baron unless you absolutely must to counter, say, three healers.
If you want defense get an Aegis.
